A Grand Granola from At Cumberland Falls Bed & Breakfast Inn

|• 5 cups||old fashioned oats|
|• 1/4 cup||sunflower seeds|
|• 2 tbsp||flax seed|
|• 1/2 cup||sliced raw almonds|
|• 1/4 cup||brown sugar|
|• 1/2 cup||honey|
|• 1 tbsp||vanilla|
|• 1/2 cup||craisins|
|• 1/2 cup||raisins|
|• 1/2 cup||apricots|
|• 1/2 cup||wheat germ|
|• 2 tbsp||sesame seeds|
|• 1/2 cup||coconut (toasted)|
|• 1/2 cup||chopped walnuts (med)|
|• 1/2 cup||chopped pecans (med)|
|• 1/2 cup||vegetable oil (or canola)|
Preheat the oven to 350 degrees. Mix all the dry fruit in a bowl, cover with water microwaving on high for 1 minute. Let stand for 5 mins and drain.
Stir all dry ingredients together in another bowl.
In a separate bowl, mix honey, oil, vanilla and then pour this solution over the dried ingredients. Mix this well allowing it to stand for a few minutes once mixed.
Grease a shallow large baking pan (not cookie sheet as you have to turn this mixture repeatedly) and spread the mixture out on the baking pan. Bake for 9 mins. Pull from the oven and stir and turn the granola. Return to the oven for 9 mins. Remove the pan, stir granola again very well. Add the fruit. Mix in the fruit returning to the oven for 9 mins. Remove your granola pan from the over and turn the oven off.
Cool granola on counter for 30 mins. Return to cool oven and let stand stirring occasionally until crisp. This can be made in very large batches. I have multiplied the recipe by 5 when I was giving the granola away as gifts.
