Bodacious Banana Nut Muffins from At Cumberland Falls Bed & Breakfast Inn

|• 2 cups||all purpose flour|
|• 1 cup||sugar|
|• 2 tsp||baking powder|
|• 1/8 tsp||salt|
|• 1 cup||olive oil|
|• 3||bananas (Mash these well before adding to recipe.)|
|• 1/2 cup||nuts (your choice)|
|• 1 tsp||vanilla|
Beat olive oil and sugar together until very well mixed and sugar is no longer grainy.
Add eggs, mix well.
Add vanilla and salt to the above mix.
Put the flour and baking powder in a larger bowl, mixing until the baking powder is well distributed with the flour
In a small bowl beat the bananas until they are thoroughly creamy. Add bananas to the wet ingredient bowl mixing until everything is blended.
Simply mix the wet ingredients into the dry ingredient bowl- only enough to combine the ingredients. It is completely ok to see small bits of flour throughout the mix.
Spray a muffin tin with baking spray and bake at 350 for 15-18 mins. Can vary with individual ovens.
Check by inserting toothpick which should come out clean- not wet.
Banana nut muffins are easily frozen.
